What are momos?

Momos are filled dumplings from the Himalayas — Tibet, Nepal, Bhutan and the hill regions of India such as Sikkim, Darjeeling and Ladakh. A thin wheat-flour wrapper is folded around a filling of minced meat or vegetables seasoned with ginger, garlic and onion, then cooked and served with a sharp, spicy chutney.

From the hills, momos travelled down into India's cities. Today they are one of the most popular street foods in Delhi, Kolkata and across north India, sold from carts and tiny shops on almost every corner.
